Abstrakt:

Cold air plasma produced by a transient spark discharge and a plasma synthetic jet actuator were successfully tested for the inactivation of native microorganisms isolated from fresh grape juice. By comparing three different setups based on the use of these sources for the treatment of juice, the batch mode employing the transient spark appeared to be the most effective for the inactivation of the native microorganisms in red grape juice.
